There are all exclusively harvested by hands. As a result of sustainable growing apply on the totality of the vineyards, from a respect-full vinification of the grapes and an adaptation of each terroir, this production from the property is used as a reference to buy fruits from locals winemakers, carefully selected.
The same attention is given to each appellation, with the best interest for the raw material. This selection will help to produce the best cru from our terroir. The follow up of the vineyards by the technical team add to the sustainability of supply contracts will create wines with the same essence as cuvee from the property. We pay a special attention on permanent research to extract the best of each climat.
For each vintage, wines are aged with carefulness, in the quiet dark of our cellars, in traditional barrel of Burgundy. 228 litres, 300 bottles: names “a pièce” The aging is done with a lot of patience and concern, during 6 to 18 months, in vaulted cellars. All our barrels exclusively come from French oak forests, with an adapted quantity of new casks. Everything is done to preserve the authenticity and the characteristic of each appellations.
Therefore, Pierre Jhean’s work is really unique. His knowledge of the vintage, combined to the exploration of the ground will help him to manage the choice of species of oak, the cooper and the burn whose lightened the wine.
