Red wine
To produce great red wines of Burgundy, the work with Pinot noir is a little bit different from the white. As soon as they will arrive in the winery, clusters receive all the attention: sorted by hand on a shaking table, destemmed, punching, hand winding. Finally, after 2 to 3 weeks of vinification, juice go down, into the safe and calm darkness of our cellars.
The aging will last between 9 to 18 months. Barrels in French oak, will mature slowly personalities of our greatest terroir of Burgundy : the creep of Savigny lès Beaune, the rusticity of Fixin, the power of Pommard, the feminity of Chambolle Musigny, the littles reds berries of Gevrey Chambertin, the sophistication of Grands Echezeaux, the meaty of Corton Renardes, the fleshy balance of Clos de Vougeot…
